Rainbow Root Vegetable Salad

This rainbow root vegetable salad is a beautiful and easy dish that adds a gorgeous array of colors to your winter table. All of the vegetables are raw so the trick is to use a mandolin to slice the veggies so they are just thick enough to hold their shape. Then we add sweet persimmon and golden raisins to perfectly balance the earthy flavor of the root veggies. It’s a celebration of the seasons bounty which makes it a perfect dish for the holidays! Everything Bagel Party Potato Salad

This is a dish I made to bring along to a Fourth of July BBQ that everyone loved. It’s a fun and delicious rift on an everything bagel with the works. It was inspired by a recipe in one of my favorite cooking magazines Bon Appetit. I adjusted it to make it dairy-free and include more flavorful, crunchy and nutritious veggies. I took a vegan version to the party because I knew it would go well with anything else on the menu. My husband had some for lunch before we left along with the salmon on a bed of salad greens and really loved it. So depending on what else you are serving (or your dietary preference) you can decide whether to add the lox. I used packaged tofu cream cheese from the supermarket, but you could certainly make your own. My cashew sour cream  would also work well in place of the cream cheese in this recipe. Real Food Fast: Sautéed Mushroom and Wilted Spinach Salad with Cashews and Sun-Dried Tomato

Here is another healthy, flavorful meal you can throw together in 10 minutes or less. I served this with toast topped with protein-rich sage hummus that I made by blending regular hummus with a couple of fresh sage leaves. It was quick, delicious and super satisfying!  Ingredients:  2 Servings 3 Tbsp Olive Oil, divided 6-8 Sage Leaves 1 Shallot, chopped 1 lb. Button or Cremini Mushrooms, thinly sliced 1 Tbsp Balsamic Vinegar 1 tsp Dijon Mustard, preferably whole-grain Sea Salt & Black Pepper 6 cups Baby Greens (spinach, kale and/or chard etc.) 1 Radish, thinly sliced 1/4 cup Cashew, Raw 1/4 cup sun-dried tomato, sliced Heat a pan over medium-high then add 2 Tbsp olive oil. When hot, fry the sage for 30-60 seconds, if it starts to brown remove immediately from the pan. Use tongs or a fork to transfer the leaves to a plate covered with a paper towel to drain and crisp. Quinoa Salad with Edamame, Orange & Fennel

This is the first in a new series of bargain recipes. Each salad cost approximately $2.75 using all organic produce. In LA I would say a salad like this would cost $12-14 at a cafe so making it at home is a big money saver!  It’s a hearty and flavorful winter dish using the best ingredients of the season. I love it because it’s really high in protein; both quinoa and edamame are complete proteins. All of the veggies means it has lots of vitamins and fiber so it’s really filling and energizing too. It’s one of those clean eats meals that’ll help you get back into your skinny jeans after the holidays 😉  You can make a bigger batch of the quinoa and edamame then freeze the leftovers to use later as a quick base for a meal. This Avocado Ranch is an updated version of my favorite ranch dressing recipe from before I went dairy free. That one called for buttermilk and mayo. Instead, we use avocado, nut milk and apple cider vinegar to create a creamy texture and bright flavor that is even better than the original! The Perfect Spring Salad

I had this salad the other day at a luncheon catered by one of LA’s best catering companies Schaffer’s Genuine Foods. As you can see, it was beautiful and, more importantly, it was delicious, so I wanted to share it with you. It’s the perfect healthy springtime salad. If you’re not familiar with the gorgeous pink vegetable, allow me to introduce you to the watermelon radish. It’s a large mild radish that is a bit sweeter and less peppery than its more common cousin. Like the red radish it’s high in vitamins including C, B-6, riboflavin and thiamine, low in calories and has a fresh and flavorful taste. You can usually find them this time of year at markets like Whole Foods or at the farmer’s market. This was served with a creamy dressing at the party, but I really love it with just a squeeze of lemon, a drizzle of extra virgin olive oil and a sprinkle of sea salt. Simplicity at its best! This is my favorite fall salad! It’s so scrumptious and full of vitamins, minerals, and antioxidants. The lettuce has a delicate, mildly sweet flavor that works beautifully with the sweet/tart flavor of the persimmon and dried cherries. The green beans add substance and the pistachios and shallot add a ton of flavor and crunch. It’s so good that I’ve decided to add it to my Thanksgiving menu this year. The great thing about making this for a holiday or dinner party is you can make the persimmon pickles and cook the green beans a couple of days ahead of time, making it really easy to put together on the big day. Deconstructed Ratatouille Salad

I just got back from our annual vacation in Canada to find summer in Los Angeles still in full swing. The first few days of September have been scorching with temperatures hovering near 100*. My tomato plants are loving the prolonged heat and I came home to find them full of sweet, delicious fruit. I couldn’t resist posting this shameless tomato selfie on the BHF Facebook Page.. When my friend Paige saw the pic she commented “I want to eat you tomatoes!” so I gladly invited her over for a tomato-centric lunch. I also had a couple of little Japanese eggplant, yellow summer squash, zucchini and peppers in the garden so I thought of making ratatouille but wanted something lighter. The Simplest and Best way to Enjoy Heirloom Tomatoes

Summer tomatoes are finally here! With fun names like Green Zebra, Brandywine, Lollypop, Pineapple each heirloom tomato seems to taste better than the next. In fact there may be nothing better than a fresh cut heirloom tomato EXCEPT- a fresh cut heirloom tomato with a sprinkle of truffle salt and a light drizzle of very good olive oil. Oh sure, you could turn them into sauce or place them on a bed of greens, but right now these fresh beauties are the real stars. Why not let them shine? Have as an easy appetizer or refreshing snack. Roasted Farmer’s Market Veggies with Berbere Spice and Tofu

I made these lovely skewers with organic baby beets, baby portabella mushrooms and purple, white and orange carrots from the new Sunset Strip Farmers Market but you can substitute with whatever is in season. Pumpkin, sweet potato, zucchini, cherry tomato, Brussel sprouts etc. would all be delicious. Try to cut everything approximately the same size so they cook evenly. If you’re using asparagus in the mix reserve and add after 20 minutes.
