Whole Roasted Maple Ginger Carrots

These carrots are a sweet and spicy treat you wont be able to resist. I just ate the whole bunch of carrots after testing this recipe! This works best with medium-sized carrots that are fairly uniform in size. If the carrots are very large, slice in half lengthwise. You can even deglaze the pan after, using a little broth and white wine to make a delicate sauce for roast white fish or grilled tofu. Ingredients: Pre-heat oven to 425* 1 bunch Carrots 1 inch piece of Ginger, peeled 1 Tbsp Olive Oil 1 Tbsp Maple Syrup 1 Tbsp water 1/8 tsp each Salt, Pepper, Cayenne & Cumin 1 Tbsp fresh Cilantro Leaves Trim carrot tops to 3/4 inch. Rinse and scrub carrots very well with a paper towel or peel. Place carrots in a baking dish in 1 layer. Grate ginger into a bowl, add olive oil, maple syrup, water and spices and whisk. High Protein Black Bean Brownies! You won’t believe how good they taste.

After reading a friends post about delicious black bean brownies, I knew I wanted to try them for myself. When I read the recipe, however,  I realized it contained a lot of butter and eggs. I figured if I was making “healthy” brownies, I wanted them to be dairy-free and suitable for plant-based diets, so I would have to make some adjustments. They have the perfect balance of ingredients to satisfy your sweet tooth, while still being packed with nutrients. When I finally got the recipe right I must admit I was feeling pretty sassy. One of the …

Good Morning Maple Nut Granola

Once you try making your own, you’ll never buy packaged granola again. Not only will it be the best you’ve ever had, but it’s super easy, preservative-free, and way less expensive than buying ready made. Its great for breakfast,, but also on top of baked fruit for dessert as a snack. If there are any other nuts you love, go ahead and add or substitute a 1/2 cup of them. Sunflower seeds, pepitas, pecans, they’re all great. You can also use honey instead of maple syrup. Or try it with macadamia nuts, dried pineapple and coconut for a tropical flair! My favorite oats to use are Bob’s Red Mill Gluten Free Whole Grain Oats. Good Morning Maple Nut Granola 2 cups rolled or old-fashioned oats 1/2 cup walnut pieces 1/2 cup slivered almonds 1/2 cup dried cranberries 1/2  cup golden raisins 3 tbsp sesame seeds 3 tbsp flax seeds 3 tbsp maple syrup 3 tbsp agave 1.5 tbsp walnut oil 1 tbsp turbinado sugar  1 teaspoon vanilla extract 1/4 tsp salt 1/4 tsp cinnamon 1/16 …
