Quick Ginger-Chili Pickled Persimmon

Ginger-Chili Pickled Persimmon are my favorite pickles of all! They are delicious on salads or as a tangy-sweet snack. Persimmon are only available for a short time each year, so this is the perfect way to save the season, and only takes five minutes to make! Quick Ginger-Chili Pickled Persimmon Ingredients: 5 Fuyu Persimmon, sliced into 1/4 inch rounds, seeds discarded 1.5 cups Raw Apple Cider Vinegar 2/3 cup Raw Cane Sugar or Coconut Sugar 1 inch Ginger, sliced 1/2 tsp Chili Flakes 1 Tbsp Kosher Salt 1/2 tsp Black Peppercorns 1/8 tsp Saffron Directions: Stuff a pint-sized mason jar with the persimmons, add the vinegar, sugar and spices. Lightly shake so everything dissolves, and stick them in the fridge. They will keep for several weeks in the unlikely event you don’t eat them sooner. Notes: If you would like to heat process, fill the mason jars with the persimmon then bring the vinegar, sugar, and spices to a boil. Cleansing Carrot Soup

This is the time of year for spring cleaning which not only means dusting the top of the fridge, (when was the last time?) but now that Easter/Passover holidays are over, it’s also a good time to do a little cleaning from the inside out. I usually do a juice cleanse this time of year but since I’ve been eating healthfully and exercising regularly I decided to takes less Draconian measures this time around. So for about a week I will forgo my beloved chocolate, but in addition to juices, I will have all-fruit smoothies and vegetable soups.  Still no oils, dairy, soy, animal protein or added sweeteners. Fruits and Veggies, that’s it! Ok, and herbs and spices. And tea. And I’ll admit I had a cup of coffee today. But it was ORGANIC. OK, so this might not be the strictest cleanse but It’s been 4 days and so far Im feeling not just great physically, but also happy!  And in the end isn’t that what it’s all about? Roasted Spiced Cacao Beans

I only recently found out chocolate grows on trees. I guess I sort of knew beforehand, but it wasn’t until I tasted whole raw cacao beans that I really got it. It’s pretty miraculous. If you haven’t tried them before, think of chocolate at its purest with nothing fluffy, like milk or sugar, to get in the way of some serious chocolate flavor. Roasting brings out the flavor even more, mostly because the aroma created by roasting is to die for.  These beans are energizing thanks to caffeine’s milder cousin theobromine, which has been used to treat high blood pressure and which some believe can treat depression. This makes them a great mid-morning or afternoon snack but avoid eating too many before bed or they can keep you up, as I found out the hard way. WARNING: These are for dark chocolate lovers only and can be totally addictive.
