Creamy White Wine Risotto With Roasted Mushroom and Thyme

If you’re looking for a beautiful and delicious main dish to serve this holiday season, look no further than this creamy White Wine Risotto with Roasted Mushroom and Thyme. I lived in Italy for a while and have so many memories of celebratory dinners with risotto at the center. I think of it as the world’s most elegant comfort food. It’s so satisfying and warming, but still feels like a special occasion food. Like a lot of people, I assumed that to get a creamy risotto, you have to add a lot of butter and cheese, but as I began to study plant-based cooking I found out that is absolutely not true! Creamy, Gooey Cashew Mozzarella

Sometimes you just want to yell “Cheese Please!” so if you’re avoiding dairy it’s best to have some fabulous plant-based versions that you can throw together when you want need a gooey, melty cheesy fix. This cashew mozzarella is perfect on Pizza, Lasagna, Pasta and as a topping for grilled veggies or steamed broccoli. It’s one of my favorite non-dairy cheeses to make because it requires only a little bit of cashews. A lot of recipes are made almost completely of nuts which can be a little too rich, not to mention pricey! It takes just a few minutes to make and uses simple wholesome ingredients, unlike a lot of the processed non-dairy cheeses at the market. Tapioca flour helps thicken this cheese and gives it a creamy, melted texture. It comes from the root of the cassava plant and is naturally gluten-free. The cheesy flavor comes from the nutritional yeast which has an almost parmesan-like taste. Nutritional yeast is a deactivated yeast that is high in B vitamins. Feel Good Blended Iced Mocha-Vanilla

Before I started to focus more on healthy eating I was addicted to a certain national coffee chain’s blended iced mocha drinks. It was pretty much a daily ritual. I decided to quit cold turkey when I did my yoga training several years ago which left me feeling pretty bad and groggy the first couple of days, but when you’re doing yoga all day you won’t feel miserable for long, so it certainly could have been worse. After training I decided that if my worst vice was morning coffee I was doing Ok, so I switched to a simple homemade brew with almond milk, which was great and definitely has a lot less crap in it than those blended drinks. Spring Clean Bowl with Wilted Greens, Cannelini Beans and Walnut Aioli

I love this hearty bowl filled with delicious springtime flavors. It is perfect as a main dish because it has a good balance of healthy protein, fats, fiber and complex carbs. I spotted these gorgeous pea shoots at whole foods which are baby pea plants packed with vitamins A, C and folic acid. If you can’t find pea shoots, try substituting with spinach leaves, arugula or baby romaine leaves. The celery in the beans not only adds crunch and lots of flavor, but also contains antioxidants and is believed to have anti-inflammatory properties. What really makes this dish special, however, is the walnut aioli, which is pretty much to die for. You can also try making it with blanched almonds.
