7-Grain Blueberry-Rosemary Pancakes with Orange Blossom Honey and Coconut Butter

Big juicy blueberries are in season right now and there’s no better way to enjoy them than first thing in the morning with these moist and fluffy Blueberry-Rosemary Pancakes. I use Bob’s Red Mill Organic 7-grain Pancake mix mix which uses stone ground whole grain flours and whole ground flaxseed meal to create a delicious earthy blend. You can find it at natural food markets or online. Fresh rosemary adds a fragrant herbal element and orange blossom honey adds a sweet floral note. Finish them off with creamy coconut butter and you have next-level blueberry pancakes that you can make in just minutes. Strawberry Mint Pudding with Vanilla Cashew Cream

Spring  is in the air which means it’s time for gorgeous fresh strawberries! Make the most of these sweet beauties with this refreshing pudding. Mint can help aid digestion making this a great light dessert, but it’s also wonderful in the morning as a breakfast pudding. It’s a thick and creamy change of pace from your typical breakfast smoothie.  Mint is also full of potent antioxidants and a natural stimulant, even the smell is uplifting! So this nutritious whole food pudding will put a smile on your face and a pep in your step.    This recipe makes more vanilla cream than you’ll need for your pudding, but you have to make that much to get the blades of your blender to turn. Good thing it’s so rich and delicious that you’ll be happy to have leftovers! You can use it as a topping on oatmeal, desserts or in smoothies later in the week. Enjoy! xJacq Ingredients: 1-2 servings Pudding: 1/2 large or 1 small Avocado 1 cup Strawberries, sliced 1 Medjool Date, pitted 1 1/2 tsp …

I am, by nature, more of a night owl than a morning person, so in the early hours I’m not often  in the mood to cook up an elaborate breakfast. Smoothies have been one of my breakfast go-tos for quite a while now. I love that you can whip one up, pour it in a cup, and head out the door. Lately though, I have been making my morning smoothie a sit down experience with this easy smoothie bowl. There is something a little more satisfying in taking the time to sit down and eat your breakfast with a spoon enjoying different tastes and textures, rather than simply sipping it through a straw. It’s also really nice to take a few minutes to be present and arrange all the toppings and make something really beautiful for yourself in the morning. Even with the artful arranging it takes less than 5 minutes to put together. Once blended you can add a limitless variety of toppings so each bowl is deliciously different. The basic recipe consists of only 3 …
