When I was a kid, a quick seafood dinner meant fish sticks with tartar sauce. While I’m sure my mom had the best of intentions when pulling the frozen minced fish logs from their packets, (“eat it, it’s good for you!” she’d say) it’s no wonder I grew up thinking I hated fish. It wasn’t until I travelled to italy as an adult (if you can call an 18-year-old an adult?) and tried their simple preparations of white fish that I found out it could be so much more than those mushy breaded sticks of my youth. One of the most popular fish on Italian menus is Branzino, a type of European sea bass with a delicate flavor and firm, flaky texture. It has become one of my favorite fish to prepare thanks to it’s versatility and light, almost sweet taste. Real Food Fast: Sautéed Mushroom and Wilted Spinach Salad with Cashews and Sun-Dried Tomato

Here is another healthy, flavorful meal you can throw together in 10 minutes or less. I served this with toast topped with protein-rich sage hummus that I made by blending regular hummus with a couple of fresh sage leaves. It was quick, delicious and super satisfying!  Ingredients:  2 Servings 3 Tbsp Olive Oil, divided 6-8 Sage Leaves 1 Shallot, chopped 1 lb. Button or Cremini Mushrooms, thinly sliced 1 Tbsp Balsamic Vinegar 1 tsp Dijon Mustard, preferably whole-grain Sea Salt & Black Pepper 6 cups Baby Greens (spinach, kale and/or chard etc.) 1 Radish, thinly sliced 1/4 cup Cashew, Raw 1/4 cup sun-dried tomato, sliced Heat a pan over medium-high then add 2 Tbsp olive oil. When hot, fry the sage for 30-60 seconds, if it starts to brown remove immediately from the pan. Use tongs or a fork to transfer the leaves to a plate covered with a paper towel to drain and crisp. Creamy, Gooey Cashew Mozzarella

Sometimes you just want to yell “Cheese Please!” so if you’re avoiding dairy it’s best to have some fabulous plant-based versions that you can throw together when you want need a gooey, melty cheesy fix. This cashew mozzarella is perfect on Pizza, Lasagna, Pasta and as a topping for grilled veggies or steamed broccoli. It’s one of my favorite non-dairy cheeses to make because it requires only a little bit of cashews. A lot of recipes are made almost completely of nuts which can be a little too rich, not to mention pricey! It takes just a few minutes to make and uses simple wholesome ingredients, unlike a lot of the processed non-dairy cheeses at the market. Tapioca flour helps thicken this cheese and gives it a creamy, melted texture. It comes from the root of the cassava plant and is naturally gluten-free. The cheesy flavor comes from the nutritional yeast which has an almost parmesan-like taste. Nutritional yeast is a deactivated yeast that is high in B vitamins. Watermelon Radish with Avocado Cream, Snap Pea and Baked Tofu

For those of you that  follow me on social media, you know that I had a canapé assignment for my plant-based cooking program at Rouxbe Cooking School. My last assignment was to have a party and make five small-bite appetizers to serve. That’s my kind of final! I was really pleased with how each one turned out, but if I had to pick a favorite, this would be it. It’s spicy, creamy, citrusy and meaty (from the tofu) all in one bite. It’s super flavorful, light and nutritious. I also love how beautiful it looks on a serving platter. It’s completely raw, so you can make this recipe quickly and still totally impress your guests.  Baked tofu is denser and more savory than traditional tofu and you can find it at stores like Whole Foods and Trader Joe’s. Black sesame seeds look cool, but can be a little hard to find. You can stick with plain white sesame seeds or use a sprinkle of black lava salt in their place. I like to use Organicville Sriracha …

REAL FOOD FAST- Zucchini Noodle Pesto Pasta with Cannelini Beans & Sun-Dried Tomatoes

This is another in my Real Food Fast series of healthy and delicious recipes that take 10 minutes or less to whip up. This flavor packed dish is a nutritious plant-based, gluten-free alternative to traditional pasta that leaves you feeling full and satisfied thanks to all the fiber, plant protein and heart healthy fats. Zucchini and summer squash also happen to be some of the lowest calorie vegetables around meaning this is the perfect kind of dish to help maintain a healthy weight.  You can get a spiralizer to turn your veggies into noodles online or most places where they sell kitchen appliances. I use the 4-blade spiralizer from Paderno which has settings for angel hair, spaghetti and shoestring noodles plus a blade for accordion cuts. Angel hair and spaghetti sized noodles work well for this. If you don’t have one however, don’t worry! You can use a regular vegetable peeler to make thin, wide pappardelle noodles. Just press down firmly along the length of the zucchini to make the noodles with your peeler.  This …

Quick & Delicious Superfood Chocolate Mole

 Mole is one of the most delicious and exciting sauces in the world in my humble opinion. It has such complexity of flavor and is surround by lore. It evokes images of old mexican ladies grinding spices and simmering chiles for days. Now, the chef in me loves the idea of cooking up an old traditional family recipe for hours on end, but the busy real-life working girl was looking for a simpler process. What I came up with is this raw version that (unbelievably!) can me made completely in a blender without missing out on all the savory flavor and spice. When I say this is a “quick” mole, keep in mind that it’s a relative term . You still have to measure out quite a few ingredients, but that shouldn’t take more than 20 minutes and I promise it’s well worth it! Feel Good Jicama Nachos

This is an awesome, healthy, plant-based alternative to traditional fat and calorie laden nachos. The best part is you get all of the delicious flavors of regular nachos without that heavy, greasy feeling. Since they are made with vegetables, nuts and legumes, you’ll be getting tons of fiber, vitamins minerals and healthy fats instead. These happen to be vegan, but everyone loves them. I put them out as a snack during football and my meat-loving husband gobbled them all up before I could even have two bites! REAL FOOD FAST- Clean Veggie Curry Bowl

  Next time you’re feeling peckish try this quick and clean curry bowl. So many delicious flavors come together in this recipe- sweet, savory, spicy, nutty – all in just 10 minutes. Here I’ve laid out traditional measurements for everything, but also more casual measurement so you can just eyeball it when you’re in a hurry. I promise it will turn out perfectly either way. This is real food fast at its best. Ingredients: 1-2 servings 1/4 Onion 2 tsp coconut oil 1/2  Zucchini, 3/4 cup Mushrooms, (about 2  handfuls) 3/4 cup Cauliflower, broken into small florets (about 2 handfuls) 1 Garlic Clove, chopped 1/2 cup Vegetable Broth 1/4 tsp EACH Kosher Salt, Black Pepper, Curry Powder (2 big pinches each) 1 can Garbanzo beans, rinsed and drained Fresh Cilantro and Italian Parsley leaves (1 small handful each) 1/4 cup Walnuts, chopped (1 small handful) 1 Tbs Mango Chutney 1 Tbsp Coconut Yogurt or Cashew Sour Cream Sriracha (optional) Sauté the onion in coconut oil over medium heat. REAL FOOD FAST- Artichokes Provençal

This french inspired meal comes together in 5 minutes and is super nutritious. All the veggies are packed with vitamins, minerals and phyto-nutrients. When parsley and garlic are eaten together they provide a synergistic boost to the immune system, aid digestion, and have natural antibiotic, anti-viral and anti-fungal properties. The beans are full of protein and fiber and the olives have healthy fats which means you’ll stay full and energized for hours. I use kitchen scissors to cut the sun-dried tomatoes, bell pepper and parsley. REAL FOOD FAST- Ezekiel Hummus Wrap

REAL FOOD FAST is a new series consisting of super fast, healthy, plant-based recipe ideas that take around 5 minutes to make. People often make excuses about being too busy to eat right, but there are lots of healthy meals and snacks you can make in less time than it would take to hit a drive through. These are my go-tos for a quick meal on the run. Ezekiel Bread Hummus Wrap– What you’ll need: 1. Ezekiel Bread or other whole grain or gluten free tortillas – I love Ezekiel sprouted whole grain tortillas because they are preservative free, organic, and since they are made with a variety of grains and legumes they are actually a complete protein! You can find them at Whole Foods or Trader Joe’s. 2. Hummus- today I used lemon, but any flavor you like will work.
