This Avocado Cream is one of my favorite things to keep in the fridge. I make it every week as part of my meal prep. The recipe seems almost too simple, but trust me, it adds an incredible amount of flavor and richness to so many dishes. Of course it’s wonderful on Mexican food,  but I especially love to use it as a topping for my lunch bowls. You can also whip it up as a quick dip for a snack or to serve at a party. Somehow it seems more sophisticated and complex than regular guacamole, but it’s actually faster and easier to make because you throw it all together in the blender in seconds. Creamy Asian Pear, Ginger and Citrus Smoothie

This is one of those happy accident recipes, where I just threw together what I had in the fridge and it turned out to be too delicious to not share. It’s creamy and sweet with the perfect little tang and spice. If Asian Pears are unavailable, try using another type of pear or sweet apple. This is a great morning smoothie with a nourishing dose or protein, healthy fats, vitamins and anti-oxidants. Apple cider vinegar, ginger and lemon are all energizing and give your digestive system a nice little kickstart. High Protein Black Bean Brownies! You won’t believe how good they taste.

After reading a friends post about delicious black bean brownies, I knew I wanted to try them for myself. When I read the recipe, however,  I realized it contained a lot of butter and eggs. I figured if I was making “healthy” brownies, I wanted them to be dairy-free and suitable for plant-based diets, so I would have to make some adjustments. I tried to adapt the original recipe and it turned out to be a dry, crumbly baking fail. I looked at other vegan black bean brownie recipes online, but to be honest, I didn’t like the looks of them. They didn’t look like real brownies in the pictures, so I didn’t bother trying them. It was back to the drawing board. After a few more attempts (OK, 6) I finally came up with a recipe for these gorgeous things. Feel Good Tacos with Avocado-Lime Mousse and Coconut Sour Cream

These healthy, hearty lettuce tacos are totally crave-worthy. Being both of mexican descent and from Los Angeles (where we take our tacos seriously!), I don’t say that lightly.  The filling is flavorful, smokey and meaty thanks to all of its savory and umami packed ingredients. The smoked salt is pretty key, you can find it at many supermarkets or gourmet markets or try my favorite from Hepp’s Salt Co. You’ll absolutely love how it tastes paired with the cool and creamy avocado mousse and tangy coconut sour cream. You can find coconut cream in cans in some supermarkets or asian markets, if yours doesn’t carry it, just get a can of coconut milk instead and place it in the freezer until it’s cold, about 30 minutes. The thick cream will rise to the top of the can. You can carefully scoop out the cream and use the remaining coconut water later in a smoothie or curry. Strawberry Rose Cashew Milk

I found fresh local strawberries at the market for the first time this year and was inspired to come up with this gorgeous, grown up version of strawberry milk. This is nothing like the powdered, bunny labeled version of your youth. The flavors are beautifully delicate and so satisfying. It reminds me of an English garden in springtime, and what could be better than that? Cashews are a good source of protein, fiber and antioxidants and rosewater is anti-inflammatory and a mood enhancer, so this delicious drink makes you feel both full and happy! Though lavender became a popular flavor with chefs in the US a few years back, rose is still a little less common. Rosewater is available, however, at many supermarkets, usually in the baking section near the vanilla extract or in the middle eastern food section. Zucchini Noodles with Quick Marinara and Creamy Cashew Parmesan Sauce

 This is such a delicious and healthy plant-based and gluten-free alternative to pasta! Everything comes together really quickly and the gooey cheese sauce tastes rich and decadent even though it contains only 2 tablespoons of cashews per serving. The secret to its texture is tapioca flour which comes from the starchy cassava plant. You get the nutty parmesan flavor from nutritional yeast which is one of the only vegan sources of vitamin B12. Using simple zucchini noodles means that even though this dish is really satisfying, it never feels too heavy like traditional creamy pasta dishes. Zucchini noodles also give you a lot more vitamins and have about 1/5th the calories of regular pasta. Spring Clean Bowl with Wilted Greens, Cannelini Beans and Walnut Aioli

I love this hearty bowl filled with delicious springtime flavors. It is perfect as a main dish because it has a good balance of healthy protein, fats, fiber and complex carbs. I spotted these gorgeous pea shoots at whole foods which are baby pea plants packed with vitamins A, C and folic acid. If you can’t find pea shoots, try substituting with spinach leaves, arugula or baby romaine leaves. The celery in the beans not only adds crunch and lots of flavor, but also contains antioxidants and is believed to have anti-inflammatory properties. What really makes this dish special, however, is the walnut aioli, which is pretty much to die for. You can also try making it with blanched almonds. QUICK SNACK- Better than Snickers Medjool Dates

When trying to consistently eat healthy, it’s important to have quick snacks in your arsenal for when you’re on the go or having a serious sweet-tooth craving. These creamy chocolatey little guys, I swear, taste better than a snickers bar! You won’t believe something so simple can be so delicious. I used 1/2 cup of hazelnuts and 1/2 cup macadamia nuts blended with 3/4 cups water and a sprinkle of salt in my Vitamix  to make the nut butter, but you can use any kind as long as it’s unsweetened. The ideal way to make homemade nut butters is to soak and dehydrate the nuts first, there is a great tutorial here. If you are using store-bought look for labels that have only nuts and optionally salt in the ingredient list. These also make great party appetizers or mini desserts. REAL FOOD FAST- Ezekiel Hummus Wrap

REAL FOOD FAST is a new series consisting of super fast, healthy, plant-based recipe ideas that take around 5 minutes to make. People often make excuses about being too busy to eat right, but there are lots of healthy meals and snacks you can make in less time than it would take to hit a drive through. These are my go-tos for a quick meal on the run. Ezekiel Bread Hummus Wrap– What you’ll need: 1. Ezekiel Bread or other whole grain or gluten free tortillas – I love Ezekiel sprouted whole grain tortillas because they are preservative free, organic, and since they are made with a variety of grains and legumes they are actually a complete protein! You can find them at Whole Foods or Trader Joe’s. 2. Hummus- today I used lemon, but any flavor you like will work.
