Orange-Ginger Creamsicle Dream Smoothie

This smoothie is so simple to make and ridiculously delicious!  It tastes so good, you’ll think it must be bad for you, but actually it’s filled with fiber, vitamin C and a dose of healthy fats. Ginger is known to stimulate the metabolism, boost the immune system, and soothe the tummy, so it’s a wonderful thing to drink in first thing in the morning. The creamy orange flavor always brings me back to childhood and puts a smile on my face, which is a very nice way to start the day. Enjoy! Ingredients: 1-2 Servings 2 Navel Oranges, peeled and broken into segments 1 heaping tsp Ginger, chopped 1/4 cup Cashews, preferably soaked 2-4 hours 1 Medjool Date, pitted 6 Ice Cubes (about 2/3 cup) Blend everything except the ice until smooth in a high-speed blender*. Strawberry Mint Pudding with Vanilla Cashew Cream

Spring  is in the air which means it’s time for gorgeous fresh strawberries! Make the most of these sweet beauties with this refreshing pudding. Mint can help aid digestion making this a great light dessert, but it’s also wonderful in the morning as a breakfast pudding. It’s a thick and creamy change of pace from your typical breakfast smoothie.  Mint is also full of potent antioxidants and a natural stimulant, even the smell is uplifting! So this nutritious whole food pudding will put a smile on your face and a pep in your step.    This recipe makes more vanilla cream than you’ll need for your pudding, but you have to make that much to get the blades of your blender to turn. Real Food Fast- Spinach, Mushroom & Egg Breakfast Burrito with Avocado 

Want to spice things up in the morning? Breakfasts burritos are a great change of pace from your regular smoothie or granola. Especially as the weather starts to cool, it’s nice to get a warm meal in first thing. You can throw this together in under 10, minutes. It’s filling, nutritious, super flavorful and just an all-around feel good way to start the day. This is the basic recipe, you can add in any of your favorite veggies. As long as they’re thinly sliced or diced, they’ll cook up quickly. Also feel free to sub other greens like kale or swiss chard. They’ll just take an extra couple of minutes to cook down. If you are cooking for one, you can refrigerate half of the beans and eggs once they’re cooked and reheat them quickly another day. If you are cooking for 3 you can stretch this recipe by cooking the whole can of beans and adding 1 more tortilla. Carrot Cake Chia Pudding

This is a delicious fall treat to serve for breakfast or dessert. It has all the sweet and spicy flavor of carrot cake but is made with wholesome superfood ingredients. Chia are packed with omega-3 oils, fiber and protein, the spices are anti-inflammatory and aid digestion, and the carrot is high in beta-carotene so it’s the perfect way to start your day or finish your meal. I use a julienne peeler to make the carrot toppings which makes it really easy. It’s the perfect thing to throw together before bed so you wake up and have breakfast sorted, just add your toppings and go. My favorite chia seeds to use are the organic white chia from Nutiva. The white seeds just look a little nicer in this pudding, but black ones work too. If serving it for dessert candied walnuts are great on top for a little extra sweetness. Another nice touch for dessert is to top it off with a dollop of cashew sour cream mixed with maple syrup which gives it that cream-cheese frosting flavor. I am, by nature, more of a night owl than a morning person, so in the early hours I’m not often  in the mood to cook up an elaborate breakfast. Smoothies have been one of my breakfast go-tos for quite a while now. I love that you can whip one up, pour it in a cup, and head out the door. Lately though, I have been making my morning smoothie a sit down experience with this easy smoothie bowl. There is something a little more satisfying in taking the time to sit down and eat your breakfast with a spoon enjoying different tastes and textures, rather than simply sipping it through a straw. It’s also really nice to take a few minutes to be present and arrange all the toppings and make something really beautiful for yourself in the morning. The Best Vanilla Coffee Creamer Ever!

This really is the best vanilla coffee creamer ever! I know that’s a bold claim but it’s true. Waking up is a little sweeter with a splash of this rich & creamy goodness in your morning joe. It’s all natural and packed with antioxidants and minerals. Cashews are an excellent source of copper, and a good source of phosphorus, magnesium, manganese, and zinc. The vanilla gives it an incredible fragrance and flavor. What it doesn’t have are any of the weird additives, preservatives or ingredients like palm oil that you find in the store-bought non-dairy creamers. This is one of the basics that I always have in my fridge. Hopefully it will be one of your favorites too. Enjoy! Feel Good Huevos Rancheros with Soyrizo and Mustard Greens

 This is my Californian variation on a traditional Mexican breakfast dish. Soyrizo is a GMO-free, organic version of the Mexican sausage that’s easily available in most big super markets and pretty much the only meat substitute meat eaters always like. Even my Grandpa who is from Oaxaca likes it just as much as regular chorizo. He even buys it himself! This is the perfect breakfast for a weekend brunch or as a healthy start to a busy workday. You can sub kale or chard for the mustard greens if you prefer. Creamy Asian Pear, Ginger and Citrus Smoothie

This is one of those happy accident recipes, where I just threw together what I had in the fridge and it turned out to be too delicious to not share. It’s creamy and sweet with the perfect little tang and spice. If Asian Pears are unavailable, try using another type of pear or sweet apple. This is a great morning smoothie with a nourishing dose or protein, healthy fats, vitamins and anti-oxidants. Apple cider vinegar, ginger and lemon are all energizing and give your digestive system a nice little kickstart. Feel Good Green Smoothie

This is my favorite green smoothie! It’s the perfect drink any morning, especially if you’re feeling run down. It’s also a great pick me up in the afternoon. You might be afraid to drink something this green, but I promise it’s super delicious, sweet and creamy. Best of all it’s packed with nutrients that make you feel great. The fruit and veggies are filled with vitamins, minerals, fiber and antioxidants. You also get a good dose of healthy fats from the avocado and protein from the nuts. Leafy greens are some of the most nutritious foods on the planet. They are believed to do everything from lower the risk of certain cancers to help prevent signs of aging. Strawberry Lemon Chia Seed Jam

Chia Seeds are a super-food packed with protein, omega-3s and vitamins. As you may know, they turn into gel when they’re mixed with water, which makes them perfect for jam-making.  Just mix your fruit with these little nutritional powerhouses and you’ll get a beautiful fresh tasting jam that is just the right consistency. 1.5 cups sliced Strawberries + 4 whole Strawberries 1 Tbs Chia Seeds 1 Tbsp Maple Syrup or Honey 1/2 tsp Vanilla Extract 1/4 tsp Lemon Juice 1/8 tsp Lemon Zest 1. Add 2 Tbs water and sliced Strawberries to a pan and heat over medium stirring until strawberries begin to break down and water evaporates, about 5 minutes. 2. Pour berries into a blender along with all the other ingredients including the 4 whole raw Strawberries and briefly puree 3. Allow to cool, pour into a jar and stick in the fridge.
